Black Forest Trifle = Chocolate Brownies, Cherry compote, Strawberries, Cream and Greek Yoghurt ….

Simple as anything, it is layers that are delicious when eaten individually, and can be layered in any way you wish. But like this they meld beautifully.

Chocolate Brownies

This is my recipe for my cakey brownies. I am not a lover of fudgy brownies, though I guess if these were cooked at a higher heat for a shorter period of time, they could be fudgy. I like them soft but slightly cakey. Yes, I am a philistine..

  • 120g dark (70-80%) chocolate, chopped
  • 80g  unsalted butter
  • 2tablespoons water
  • 100g caster sugar
  • 100g SR flour
  • half teaspoon salt
  • one teaspoon vanilla extract
  • 2 large eggs

Put the chocolate, butter and water into a saucepan and melt over a low heat. Stir in the sugar and vanilla and allow to cool slightly.

Sift the flour and salt into a bowl and mix in the chocolate mixture. When this is smooth, beat in the eggs.

Grease and line a tray bake tray – something around 25 x 20 cm (10 x 8 ins) or thereabouts. Smooth the mixture into the tray, it will be relatively thin, this is good for the trifle.  If you plan to make these as ordinary brownies, I would suggest adding half as much again of each ingredient to make a thicker brownie.

Bake in a moderate oven, gas mk 4 for around 18 mins for thin brownies, 25 mins for thicker ones. This will give you soft cakey brownies, so cut the timing if you like them fudgy.  When cooked to your liking, allow to cool slightly in the tin before removing and cooling on a tray.

Fruit layers

I used a punnet of strawberries (thank you Fruit for the Office) hulled and quartered, sprinkled with lemon juice and caster sugar and left to form a light syrup.
Also Bonne Maman cherry compote.

Cream layers

I am VERY pleased with this flavour. I wanted something similar in flavour to a New York Cheesecake, but lighter and creamier.

  • 1 small (roughly 200g or so?) carton of double cream
  • 100g Total 0% Greek Yoghurt
  • One teaspoon vanilla extract
  • One tablespoon lemon juice

Simply mix all together and leave on one side to allow the yoghurt and lemon juice to thicken the cream.

Now just layer as you please.  I put a layer of cubed brownies in the bottom, then some strawberries, cream, more brownies, cherries, cream and a grating of dark chocolate on the top.

Eat in front of the computer making yum mmmm nom noises.
